Thai Ginger Dip Mix
Great with crackers and veggies but also with spring rolls, California rolls, and even wings! You can also use the dry mix to sprinkle on rice, veggies, or add to stir fry. A big favorite here at Wind & Willow HQ is the recipe for "Asian Chicken Wraps"
Asian Chicken Wraps
1 Thai Ginger Dip Mix
1/2 cup creamy peanut butter
1/4 cup warm water
2 Tbsp. soy sauce
2 Tbsp. rice wine vinegar
2 cups julienne cut vegetables (cucumber, cabbage, red bell pepper, carrots are our favorites)
1/2 cup bean sprouts
1 cup chicken (cooked & shredded or cubed)
6 tortillas or wheat sandwich wraps
In a large bowl, whisk together peanut butter, warm water, soy sauce and vinegar. Stir in Thai Ginger Dip Mix. Add chicken and vegetables. Stir until coated. Spoon onto wraps. Roll up and serve.
Alternate serving suggestion: Add veggies and chicken to wrap. Drizzle on the Thai Ginger sauce. This allows you to use as little or as much as you like.
