Wind & Willow Soup Mix





Amalfi Coast Pasta


Ingredients

1 Minestrone Soup Mix
2 cups Water
1 15-oz can Diced Tomatoes- drained (or 1-3/4 cup fresh)
2-3 cups Fresh Mushrooms
1 cup Heavy cream
1-1/2 cup Grated Parmesan (divided)
1 lb. Italian sausage, cooked and crumbled

Directions

Preheat oven to 400 degrees. Spray 8 x 11" baking dish with oil.

In pan over medium heat, combine Soup Mix with water, tomatoes, and mushrooms; bring to a boil and cook for 10 minutes. Add cream, 1 cup of the parmesan cheese, and cooked sausage. Return to simmer and and cook for 2 more minutes stirring frequently. Pour soup mixture into prepared baking dish. Sprinkle with remaining 1/2 cup of grated parmesan cheese. Bake for 10 minutes or until mixture is bubbling and begins to brown. Remove from oven and allow to cool for 10 minutes before serving. Serve with bread and salad for a quick and delicious meal!

Tip: You may use a 2 quart casserole dish instead of the 8 x 11" dish and increase baking time frin 10 to 14 minutes.


Chicken & Stuffing


Ingredients

1 Chicken Noodle Soup Mix
4 cups water
3 cups diced, cooked chicken
1 boxed stuffing mix
3/4 cup sliced almonds

Directions

Preheat oven to 350 degrees. Spray a 9x13" pan with oil.

Add Chicken Noodle Soup mix to water in a 2 qt. saucepan; heat to boiling. Reduce heat and simmer for 20 minutes, stirring occasionally.

Prepare stuffing according to package directions. Place prepared stuffing mix into bottom of prepared pan. Top with diced chicken. Pour soup mixture over the chicken. Sprinkle with almonds.

Bake 15-20 minutes. Serves 6-8.
