Amalfi Coast Pasta
1 Minestrone Soup Mix
2 cups Water
1 15-oz can Diced Tomatoes- drained (or 1-3/4 cup fresh)
2-3 cups Fresh Mushrooms
1 cup Heavy cream
1-1/2 cup Grated Parmesan (divided)
1 lb. Italian sausage, cooked and crumbled
Preheat oven to 400 degrees. Spray 8 x 11" baking dish with oil.
In pan over medium heat, combine Soup Mix with water, tomatoes, and mushrooms; bring to a boil and cook for 10 minutes. Add cream, 1 cup of the parmesan cheese, and cooked sausage. Return to simmer and and cook for 2 more minutes stirring frequently. Pour soup mixture into prepared baking dish. Sprinkle with remaining 1/2 cup of grated parmesan cheese. Bake for 10 minutes or until mixture is bubbling and begins to brown. Remove from oven and allow to cool for 10 minutes before serving. Serve with bread and salad for a quick and delicious meal!
Tip: You may use a 2 quart casserole dish instead of the 8 x 11" dish and increase baking time frin 10 to 14 minutes.
