1/3 cup Stonewall Kitchen Wild Maine Blueberry Jam
4 ounces Mascarpone cheese, room temperature
30 mini Phyllo cups (prebake follow package instructions)
Garnish-small blueberry, candied lemon peel, or whipped cream with a small mint leaf.

Whisk cream and sugar until soft peaks form. Gently heat Stonewall Kitchen Wild Maine Blueberry Champagne Jam or Wild Maine Blueberry Jam in a small saucepan or in the microwave making sure it is smooth, but not too hot. Peach Melba Shortcakes

ingredients

3 Tbsp. sugar
1 Cupcake flour
1 cup unbleached all-purpose flour
2 Tsp. cream of tartar
1 Tsp. baking soda
1/2 tsp. salt
Pinch of grated nutmeg
1 stick unsalted butter, chilled and cut into small pieces
3/4 cup light cream
1/4 cup Stonewall Kitchen Raspberry Peach Champagne Jam
1 cup heavy cream
1 Tsp. vanilla extract
6 whole firm ripe peaches, peeled and poached or 2 (16-ounce) cans juice-packed peach halves

directions

Preheat oven to 400 degrees F. Position rack in center of oven.

Combine 2 Tbsp. of the sugar with flour, cream of tartar, baking soda, salt and nutmeg in a food processor. Process briefly to blend. Add butter and pulse until mixture resembles coarse meal. Pour in light cream and pulse just until mixture forms a soft dough. Do not overwork.

Roll dough on a floured surface, using a lightly floured rolling pin, to a thickness of 3/4 inch. Use a cookie cutter or shape by hand into circles about 3 to 3 1/2" inches in diameter, gathering scraps and re-rolling as necessary. Place on cookie sheet and bake until shortcakes are golden brown, about 13 to 16 minutes. Remove pan from oven and let cool.

Combine heavy cream, vanilla and remaining tablespoon of sugar in a chilled bowl and beat into soft peaks. Remove pits from peaches, if using fresh peaches, and cut each half in four sections.

Split shortcakes horizontally, and moisten cut sides with a little of the poaching liquid or juice from the can. Arrange peaches on the bottom half of each shortcake. Spoon 2 Tsp. of Stonewall Kitchen Raspberry Peach Champagne Jam over peaches, then a large dollop of whipped cream. Place lids on top and garnish each with a small dollop of cream.

Tenderloin of Pork with Beet Greens

ingredients

2 tenderloins of pork (approximately 1 - 1 1/4 pounds each)
1 1/2 cups beef or chicken stock (preferably homemade)
1/4 cup Cognac, wine or apple juice
3/4 cup Stonewall Kitchen Fig & Ginger Jam or Roasted Garlic Onion Jam
1/2 pound beet greens (approximately 4 cups, tightly packed)
Extra Virgin Olive Oil (to coat pan)
Salt and Pepper

directions

Pre-heat oven to 350 degrees F.

In a saute pan over medium-high heat, add enough oil to lightly coat pan. Salt and pepper the tenderloin and then sear 3-4 minutes per side until all sides are browned. Transfer to an oven-proof dish and add 1/2 cup of the stock.

Bake uncovered 20-25 minutes, until pork is slightly firm to the touch, registering 150 degrees on a meat thermometer.

While pork is baking, return saute pan to medium heat and add Cognac to deglaze pan. Add remaining 1 cup stock to pan and reduce by half. Add jam and reduce to sauce consistency. Transfer sauce to a bowl.

Remove pork from the oven, and pour the pan juices into the sauce. On medium heat, saute the beet greens until slightly wilted.

Plate greens, top with pork that has been cut into 1/4 - 1/2 inch slices, and drizzle with sauce.
